INGREDIENTS
3 kg Angus Striploin Slab
3 tbsp Rock Salt
2 tsp Black Pepper
2 tsp Chipotle Dry Rub (makes 12 teaspoons): - 2 tsp chipotle chili powder - 1 1/2 tsp smoked paprika - 1 1/2 tsp garlic powder - 3/4 tsp ground coriander - 1/2 tsp black pepper
- 1/2 tsp ground cumin - 1/2 tsp dried oregano - 1/4 tsp salt
PREPARATION
Step 1
In a bowl, mix your salt, pepper and chipotle rub until well combined. Generously massage the rub all over your slab of Striploin.
Step 2
Preheat oven to 450°F. Place meat, fat side up, on rack in roasting pan and roast in the oven for 15 minutes.
Step 3
Reduce oven temperature to 350°F. Roast meat until instant-read thermometer inserted into thickest part of meat registers 130°F for medium rare doneness, about 30 minutes.
Step 4
Remove from the oven and let rest for 30 more minutes before serving.
